This recipe was developed keeping in mind that #Instantnoodles were swept off their shelves leaving some being deprived of their favourite flavours. This instant noodle recipe uses some store-bought ingredients but also fresh ingredients to increase the nutrition of the meal.

Recipe: Makes for a solitary pleasure


Cooking Time: 5-7 minutes


Ingredients:

1 Packet Instant Noodles

5 Shallots/small onions/sambar onion (roughly chopped)

1 Green Chilli (snipped or chopped)

1 Big Tomato (chopped)

1 tsp Olive Oil

1 tsp Sambar Powder (or use any curry powder of your choice)

1 tbsp Tomato Ketchup

1 tsp Chilli Sauce

2 cups Water

1 Boiled Egg (optional)

Fresh Coriander for garnish

Green Capsicum (cut into stripes) for garnish

Toasted Sesame Seeds for garnish

Salt to taste

Pepper to taste


Method:

Take a saucepan. Add 1 tsp of oil to it and tip in the roughly chopped shallots to it. Fry for 1 minute. Add the chopped tomatoes in but do not cook it down, keep it fresh. It should not become soft. Add the green chilli, sambar powder and fry it for 30 seconds. Add the 2 cups of water. Add the tomato sauce, chilli sauce, salt and pepper to taste.


Add the instant noodles into the saucy water. Cook for a minute. Any more you will be serving overcooked noodles.


Serve this soupy, hot noodles in a bowl. Garnish with the egg, green capsicum, coriander and sesame seeds. Enjoy!
